Bobby's
Roadside

Bobby Coyote's next chapter — a roadside burger and shake concept rooted in Sacramento tradition and built for Davis.

The Founder

Bobby Coyote has spent 30 years building something real.

When Bobby opened the first Dos Coyotes in Sacramento, he wasn't following a trend. He was building a community restaurant — fast, fresh, and honest. Three decades later, Dos Coyotes is a Northern California institution with a loyal following that spans generations.

Now Bobby is ready for his next chapter. Not a franchise. Not a pivot. A focused, deliberate new concept built on everything he knows about what makes a restaurant last: simplicity, quality, and a genuine connection to the people it feeds.

"I've spent 30 years learning what people want from a great restaurant. Now I want to build the burger place I always wished Davis had."
— Bobby Coyote, Founder

The concept is called Bobby's Roadside. Burgers. Shakes. Fries. Done right. Built for Davis — and designed to last.

The Opportunity

Davis has been waiting for this restaurant.

Davis is one of the most food-engaged small cities in California. UC Davis brings 40,000 students and a dense, walkable customer base. The community supports local institutions deeply and rewards quality, consistency, and authenticity.

The old Murder Burger site on Olive Drive is available. It is one of the most recognized restaurant addresses in Davis — a site with 40+ years of burger history baked into the local memory. Customers already know what to do when they pull into that lot.

The Origin

A legacy that makes this possible.

Bobby's partner in this venture is Greg Taylor — a Sacramento restaurant architect whose father, Willie Taylor, built Willie's Burgers on Broadway into one of Sacramento's most beloved burger joints.

Greg grew up in that restaurant. He learned the rhythms of a great burger kitchen from the inside out. Later, he and his wife operated Willie's Burgers in Old Sacramento for a decade, keeping the tradition alive while building his own career designing restaurants across Northern California.

Willie's closed its Old Sacramento location after ten years. That chapter is finished. But the knowledge, the instincts, and the deep belief that a great burger served in a well-designed room can become a community institution — that lives on.

"My father built something people loved for a reason. The ingredients were simple: a good burger, a welcoming room, and a place that felt like it belonged. That's what we're building again."
— Greg Taylor, Architect & Partner

Greg brings architectural expertise, operator experience, and family legacy to the concept. Together, Bobby and Greg are building something that neither could do alone — and that Davis has never had before.

Why This Works

Bobby has done this before.
The conditions have never been better.

  • Proven operator: Bobby built Dos Coyotes from a single location into a multi-unit Sacramento institution. He knows how to open, run, and grow a restaurant that people love.
  • Site legacy: The Murder Burger footprint on Olive Drive carries 40+ years of Davis burger history. Customers arrive with context and goodwill already built in.
  • Architectural partnership: Greg Taylor designs the space with the same rigor he brings to every restaurant project — and the Willie's lineage gives the concept an emotional authenticity no marketing budget can manufacture.
  • Menu discipline: Three products. Counter service. No drift. The operational simplicity that comes from a focused menu is what allows quality to stay consistent as volume grows.
  • Davis is underserved: For a food-forward university city, Davis lacks a premium, locally-owned roadside burger concept. This fills a real gap with a real operator.
  • Scalable from day one: The Davis location is designed as a prototype. Every design decision, operational system, and brand element is documented for replication at future sites.
Roadmap

One great location first.
Then a platform.

Phase 1 · Now
Bobby's Roadside — Davis, Olive Drive
Open the Davis prototype. Prove the concept, refine the operation, and build the loyal base. Bobby's name and reputation anchor the brand. Greg's design creates the physical identity. Willie's legacy provides the soul.
Phase 2 · Expansion
Taylor's — Northern California Burger Platform
The Davis unit becomes the model for a larger Taylor's-branded platform — a scalable roadside burger and shake concept built for great Northern California locations. Sacramento, Chico, Woodland, Napa, and beyond.

Let's build this together.
